But every year, dads everywhere (reluctantly) hand over the BBQ tongs and let someone else take the reins.<\/p>\n<p>Which brings me to my barbeque specialty: The <a href=\"http:\/\/en.wikipedia.org\/wiki\/Kebab\" target=\"_blank\" rel=\"noopener\">Shish Kebab<\/a>, it\u2019s hard not to love meat on a stick! Easy to make ahead of time, easy to customize for special requests and easy to grill \u2013 once you\u2019ve got the basics down.<\/p>\n<div id=\"attachment_2771\" style=\"width: 730px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.geranium.com\/blog\/wp-content\/uploads\/2013\/06\/grilled-shishkebab-sweetpotato.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-2771\" class=\"wp-image-2771 size-large\" src=\"http:\/\/www.geranium.com\/blog\/wp-content\/uploads\/2013\/06\/grilled-shishkebab-sweetpotato-1024x685.jpg\" alt=\"Experiment with different vegetables as well as meat\" width=\"720\" height=\"482\" srcset=\"https:\/\/www.geranium.com\/blog\/wp-content\/uploads\/2013\/06\/grilled-shishkebab-sweetpotato-1024x685.jpg 1024w, https:\/\/www.geranium.com\/blog\/wp-content\/uploads\/2013\/06\/grilled-shishkebab-sweetpotato-300x201.jpg 300w, https:\/\/www.geranium.com\/blog\/wp-content\/uploads\/2013\/06\/grilled-shishkebab-sweetpotato-720x482.jpg 720w, https:\/\/www.geranium.com\/blog\/wp-content\/uploads\/2013\/06\/grilled-shishkebab-sweetpotato-192x128.jpg 192w\" sizes=\"auto, (max-width: 720px) 100vw, 720px\" \/><\/a><p id=\"caption-attachment-2771\" class=\"wp-caption-text\">It&#8217;s fun to experiment with different vegetables, customizing kebabs is a real dinner pleaser.<\/p><\/div>\n<p>Here are a few tips that will lead to &#8220;Kebab Kudos&#8221; from everyone.<\/p>\n<p><span style=\"text-decoration: underline;\">The Meat <\/span><br \/>\nOriginally this was a Turkish dish of <a href=\"http:\/\/www.jamieoliver.com\/recipes\/lamb-recipes\/the-best-marinated-lamb-kebabs\" target=\"_blank\" rel=\"noopener\">marinated lamb<\/a> (&#8220;shish kebab&#8221; is Turkish for \u201cgrilled meat on skewers\u201d) but now we skewer everything from tofu to chicken.<br \/>\nMe? I stick to beef \u2013 sirloin to be exact, either tenderloin or filet. &nbsp;But bacon, chicken, just about any type of meat that&#8217;s your favourite will work. Just be sure it&#8217;s cooked thoroughly especially when dealing with chicken or pork.<br \/>\nTo ensure that the kebab meat doesn&#8217;t cook too quickly, or get shriveled up, cut the meat into at least one inch to 1\u00bd inch thick cubes.<\/p>\n<div id=\"attachment_2772\" style=\"width: 730px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.geranium.com\/blog\/wp-content\/uploads\/2013\/06\/shish-kebab-meat-skewer-food-onion-barbecue-bacon.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-2772\" class=\"wp-image-2772 size-large\" src=\"http:\/\/www.geranium.com\/blog\/wp-content\/uploads\/2013\/06\/shish-kebab-meat-skewer-food-onion-barbecue-bacon-1024x603.jpg\" alt=\"shish kebab, barbecue, bbq, barbeque\" width=\"720\" height=\"424\" srcset=\"https:\/\/www.geranium.com\/blog\/wp-content\/uploads\/2013\/06\/shish-kebab-meat-skewer-food-onion-barbecue-bacon-1024x603.jpg 1024w, https:\/\/www.geranium.com\/blog\/wp-content\/uploads\/2013\/06\/shish-kebab-meat-skewer-food-onion-barbecue-bacon-300x177.jpg 300w, https:\/\/www.geranium.com\/blog\/wp-content\/uploads\/2013\/06\/shish-kebab-meat-skewer-food-onion-barbecue-bacon-720x424.jpg 720w\" sizes=\"auto, (max-width: 720px) 100vw, 720px\" \/><\/a><p id=\"caption-attachment-2772\" class=\"wp-caption-text\">Bacon and chicken are great alternatives to a beef shish kebab.<\/p><\/div>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\">The Skewers<\/span><br \/>\nSquare or flat metal <a href=\"http:\/\/www.eatingwell.com\/healthy_cooking\/healthy_cooking_101_basics_techniques\/kebab_skewers_which_skewers_to_use_for_kebabs\" target=\"_blank\" rel=\"noopener\">skewers<\/a> will hold food more securely, but wooden skewers will work just fine.<br \/>\nWhen using wood (bamboo) skewer sticks soak them in water for at least 30 minutes prior to making the kebabs. That way they won&#8217;t catch fire on your grill and burn. Putting a little tin foil on the exposed ends before grilling is also a good idea. A great tip I found from the Carlo on the <a href=\"http:\/\/en.paperblog.com\/6-secrets-to-perfect-shish-kebab-grilling-398534\/\" target=\"_blank\" rel=\"noopener\">PaperBlog<\/a> \u201cWhen you&#8217;re in a hurry (And who isn&#8217;t these days?), soak the entire package of skewers at one time, Afterwards drain the water, and freeze them. Then when you want to use them, pull out the exact amount that you&#8217;ll need.\u201d<br \/>\nTo avoid the meat and vegetables sticking to the skewer when ready to eat, try spraying them with cooking spray. Think of colour when choosing what to add, (a selection of green, red, yellow looks really appetizing.) Just be sure to fill skewers with uniformly sized pieces. Also don\u2019t overload the skewer, and make sure you leave a little space between the pieces so that the heat circulates evenly.<\/p>\n<p><span style=\"text-decoration: underline;\">The Marinade<\/span><br \/>\nA tangy marinade will give any food delicious flavor, and it\u2019s perfect for shish kebabs. Remember that it doesn\u2019t take long for the marinade to flavour and tenderize the meat because your pieces are smaller than a regular cut of meat; an hour or two is sufficient. Letting the meat marinate too long in a marinade with vinegar or lemon juice can result in tough or mushy meat. Here\u2019s the marinade <a href=\"http:\/\/www.food.com\/recipe\/the-best-marinade-for-kabobs-beef-pork-and-lamb-116996\" target=\"_blank\" rel=\"noopener\">recipe<\/a> I like to use.<\/p>\n<p><span style=\"text-decoration: underline;\">The Grill<\/span><br \/>\nThe main secret to meat and <a href=\"http:\/\/www.foodnetwork.com\/recipes\/grilled-marinated-vegetable-kebabs-recipe\/index.html\" target=\"_blank\" rel=\"noopener\">vegetable kebabs<\/a> is to grill them over direct medium-high heat. The higher heat will sear the meat and lock in juices. They don&#8217;t take very long, so keep your eye on them. If your meat pieces are larger and you want them more well-done, move the kebabs to indirect heat to avoid charring.<\/p>\n<p><span style=\"text-decoration: underline;\">The Finishing Touch<\/span><br \/>\nServe it with <a href=\"http:\/\/www.mnwildrice.com\/recipes.htm\" target=\"_blank\" rel=\"noopener\">wild rice<\/a>, pasta or my favourite &#8211;<a href=\"http:\/\/www.delish.com\/recipes\/cooking-recipes\/rice-salads\" target=\"_blank\" rel=\"noopener\"> rice salad<\/a> and tadah!
